We could use other beef fat. But we don't. Here's why...

We want to make the best tallow possible. Suet is the hard, protective fat found around the kidneys and other internal organs of cattle. Because of its composition and location, it gives us a clean, refined fat that works beautifully when rendered into tallow. And honestly? We're picky because we're making this for ourselves, too.
"The Altruistic Reason"
We believe in using more of the animal—not just the parts that are easiest to sell. Suet is a valuable part of the animal that can otherwise become an overlooked byproduct. When we turn it into tallow, we're giving that fat another purpose instead of letting a valuable resource go to waste. To us, making tallow is also about making better use of what’s already there.
"The Real Reason"
We're obsessed with the details. We could render different kinds of beef fat, but when you start with suet, you have greater control over the final product. When you're making something people put on their skin, cook with, or use every day, we believe the starting material matters. For us, making great tallow isn’t just about the rendering process. It starts long before the fat ever hits the kettle. It starts with choosing the right fat in the first place.
